Yacon- Harvesting the tubers

Our Yacon plant was starting to collapse exposing the tubers so we decided it was time to harvest the crop:E14_7604p1

This first photo shows the long stems – about 5ft or more tall – collapsing away from the centre of the plant. Looking down at the roots we see the tubers have been pulled up a little as the stems have fallen away:

Time to dig them up! This next photo shows the digging in progress; a few of the tubers have already been dug and can be seen in the background. This view shows the fork lifting the tubers. The fork has been kept in to give some idea of scale.

And this view shows the complete crop – the fork, again, is there to show scale:

These photos have been taken not for artistic merit, but as a record of this plant that may be of use for magazines or books.
